So this is a delicious peppermint snack that is super simple to make. I had lots of fun with this recipe.
What you will need:
¼ cup butter, softened
⅓ cup light corn syrup
3 – 4 cups powdered sugar, divided
1 – 2 tsp peppermint extract or mint extract OR any other extract you want
food coloring – preferably gel or paste
½ cup granulated sugar (to roll balls in)
First, you want to mix the corn syrup and butter together.
You want it to be as mixed as possible!
Then you want to add the mint/peppermint extract, add 1 tsp of peppermint extract and 1/2 tsp until you reach the desired taste.
Get ready to add your icing sugar. This will be messy. (This is my favorite part.)
Once you have it to a dough like consistency (it will be a little more squishy than a bread dough.)
You will want to put powder sugar down on your work space, so you can knead the dough.
After it is thick enough to roll into balls, you will want to add your food colouring. I chose pink and a green color.
You will then roll it into balls and roll in granulated sugar.
I forgot to take a picture of the last step but it is fairly simple.
Take a baking pan and a piece of parchment paper.
Then set the rolled ball and squish it with a fork. So it is a flat disc.
Let them sit for 4 hours and boom! Delicious peppermint treats.
This batch makes 30-40 peppermint discs.
